Sensory

Flavour Profile

Earthy and mildly savoury raw; umami concentrates once water evaporates and surfaces caramelise. Crowding a cold pan steams rather than sears.

Origin

Origin & Harvest

Grown year-round on compost substrate in controlled conditions. Caps should be closed, dry and firm at purchase — damp or slimy specimens will not brown well.

Kitchen

Culinary Uses

Sauté in batches over high heat; fold into sauces, soups, pies and risotto; dry-fry before adding fat to drive off moisture. Pair with garlic, cream, thyme and sherry in classic combinations.

Common Mistake

Crowding a cold pan — mushrooms release water and stew instead of taking on colour.

Preservation

Storage

Paper bag in the refrigerator — avoid sealed plastic, which traps moisture. Brush clean; do not soak. Use within a few days while caps remain firm.
