Saffron Rice

A simple golden rice dish that shows how warm liquid carries saffron colour and perfume through neutral starch.

What you need

For the rice

  • 250 g basmati rice, rinsed
  • 400 ml hot chicken or vegetable stock
  • A generous pinch saffron threads
  • 1 small onion or shallot, finely chopped
  • 25 g butter, or 1 tbsp olive oil
  • salt, to taste

How to make it

  1. Rinse the rice until the water runs mostly clear, then drain well.

  2. Bloom the saffron in a few tablespoons of warm stock for 10 minutes.

  3. Gently soften the onion or shallot in butter or olive oil without browning.

  4. Stir in the rice so the grains are lightly coated.

  5. Add the saffron liquid and the remaining hot stock, then season lightly with salt.

  6. Bring to a gentle simmer, cover tightly and cook over low heat until the liquid is absorbed.

  7. Take the pan off the heat and rest, covered, for 5–10 minutes.

  8. Fluff the rice gently with a fork and finish with lemon zest or parsley if using.

Why it works

Saffron releases its colour and aroma best when bloomed in warm liquid before it meets the rice. The rice then absorbs that liquid gradually, carrying the saffron evenly through the grains. Gentle cooking and a short rest help the rice finish evenly without turning mushy.

Cook's notes

Use a pan with a tight-fitting lid and keep the heat low once the liquid is added. Do not stir constantly after the rice is covered; let the grains absorb the liquid undisturbed. Resting off the heat helps the texture settle.

Variations

Use vegetable stock for a lighter version, chicken stock for more savoury depth, or add a bay leaf or strip of lemon zest to the cooking liquid. Keep saffron measured; too much can taste harsh.

Leftovers can be chilled and reheated gently with a splash of water. Saffron rice is best freshly cooked but keeps well enough for packed lunches or next-day bowls.
